Rice Puffs Ladoo



Rice Puffs-2cups
Jaggery-1/2cup
Cardamom powder-1tsp
Water-2tbsp



  • Boil jaggery, water and cardamom powder in a pan on medium heat.Cook until it reaches one thread consistency.
  • Add rice puffs and mix well.Remove from heat and mix well  until the rice is fully coated with the jaggery.
  • Rub the palms slightly with ghee and make balls immediately.

Meat Puffs



1.Puff Pastry Sheets-1
2.Minced beef/mutton-150gms
   Turmeric powder-1/4tsp
   Pepper powder-1/2tsp
   Salt
2.Onion(chopped)-2
   Ginger paste-1tsp
   Garlic paste-1tsp
   Green chilly(chopped)-2
   Tomato(chopped)-1small
3.Chilly powder-1/2tsp
   Coriander powder-1tsp
   Garam masala powder-1/4tsp
4.Coriander leaves(chopped)
5.Coconut oil-1tbsp


  • Cook meat with turmeric powder,pepper powder and salt.
  • Heat 1tbsp oil in a pan .Add onion,ginger garlic paste  and green chilies and fry until golden color.Add spices, cooked beef  and chopped tomato.Cook until all water is absorbed.Add coriander leaves and remove from heat.
  • Roll out the pastry on a lightly floured surface and cut into 6 strips.Place 1-2tbsp of masala .Seal the edges by applying very little water.Brush with egg wash.

  • Bake in a preheated oven at 200 degree C for 10-12 minutes


Curried Egg Puffs



1.Puff Pastry Sheet-1
2.Egg-3
3.Onion(sliced)-3
  Gingergarlic(chopped)-1tbsp
  Tomato-1
4.Turmeric powder-1/2tsp
  Chilly powder-1tsp
  Coriander powder-1&1/2tsp
  Garam masala-1/4tsp
5.Thick coconut milk-2tbsp
6.Salt
7.Coconut oil-1tbsp





  • Mix sliced onion,ginger, garlic, salt and coconut oil in a microwave safe dish. Microwave on 100% power for 4 minutes.Stir 2 times during cooking.
  • Add masalas and microwave on 80% power for 1 minute.
  • Add chopped tomatoes and coconut milk.Microwave on 80% power for 6-8 minutes.Stir 3 times during cooking.Adjust salt and let it rest for 3-4 minutes.
  • Roll out the pastry on a lightly floured surface and cut into 6 strips.Place 1tbsp of masala and then a half of boiled egg,cut side down.Seal the edges by applying very little water.Brush with egg wash.

  • Bake in a preheated  oven at 200 degree C for 10-12 minutes


Umm Ali (Egyptian Bread Pudding)


Umm Ali (Egyptian Bread Pudding) is my son's fav dessert.I was very much impressed  'Cook from Doha's-(Experiments with taste)' way of preparing Umm Ali.From the day I saw Umm Ali in her blog,I wanted to try it out.  Finally I got a chance to do it.The taste was too good like restaurant.

Beef Stuffed Dinner Rolls



Stuffing

  • Cook beef with turmeric powder,pepper powder and salt.

Rolls
Whole wheat flour-1cup
All purpose flour-1/2cup
Milk-3/4cup
Active dry yeast-1tsp
Honey-2tbsp
Olive oil-2tbsp
Salt
Egg white-1
  • Add yeast in warm milk and leave the mixture aside for about 15 minutes.
  • Combine wheat flour,all-purpose flour,honey ,olive oil and salt in a bowl.Add yeast milk and knead mixture until smooth and elastic.
  • Cover with a wet cloth and allow to rise in warm place for an hour.
  • Punch the dough down.Again cover the dough with a damp cloth and leave it for 10minutes.
  • Make rolls out of the dough and stuff with the beef mixture.


  • Cover with a clean cloth and allow to rise in a warm place for about 30 minutes.
  • Brush with eggwhite.

  • Preheat oven to 200 degree C (400 degrees F).Bake for 10-12 minutes or until golden brown.
  • Remove from oven and brush with melted butter.

Egg less Wheat Flour Cookies (Naan Khatai)



1.Wheat Flour-1&1/2cup
   Baking Powder-1tsp
2.Sugar-3/4cup
   Cardamom seeds-4
3.Refined Oil-3/4-1cup
  • Grind sugar along with the cardamom seeds until very fine.
  • Mix together flour,baking powder and sugar.
  • Add oil little by little and prepare a soft dough without adding water.Keep it aside for an hour.
  • Shape into small balls and flatten.
  • Bake in a preheated oven at 180 degree C  for 2o-25 minutes.


Jackfruit Seeds &Snake Gourd Stir Fry (Chakkakuru Padavalanga Thoran)



1. Jack fruit seeds-1cup
   Snake gourd-1cup
Cut jack fruit seeds and snake gourd lengthwise.


2.Shredded coconut-1/2cup
   Cumin seeds-1tsp
   Green chilly-3
   Garlic-2
   Turmeric powder-1/4tsp
Grind coconut with cumin seeds,Green chilly,Garlic and turmeric powder into a coarse paste.


3.Coconut oil-2tsp
   Mustard seeds-1tsp
   Dry red chilies-2
   Curry leaves-1



  • Cook jack fruit seeds with turmeric powder and salt.
  • Mix together cooked jack fruit seeds ,snake gourd,coconut paste and salt.
  • Heat oil in a pan and splutter mustard seeds.Fry curry leaves and dry red chilly.Add jack fruit seeds mixture and saute for a minute.Cover and cook on low flame.After 5 minutes snake gourd will be cooked.Stir for a few more minutes and remove from heat.

Beef Ada



For dough
Maida-1cup
Wheat flour-1cup
Oil-3tbsp
Salt
Water.

Mix flour and salt into a bowl. Make a well into the centre and add the oil and enough water to make a firm dough.Set aside for about 20 minutes.
For filling

   Ginger paste-1tsp
   Garlic paste-1tsp

Making Adas

  • Divide the dough into round portions.Roll it into a thin round.Stuff it with beef mixture and seal the edges using a few drops of water.



  • Beat egg with chilly powder ,1tbsp milk and salt.Dip ada into this mixture deep fry till golden color.


    Whole Wheat Dinner Rolls

    All purpose flour-1/2cup
    Milk-3/4cup

    Seasame  seeds-1tbsp

    Peanut Ladoo



    Peanuts-1cup
    Jagerry-1/2cup
    Cardamom seeds-3



    • Roast peanuts for about 15 minutes on a medium flame  and remove skin.
    • Grind roasted peanuts with jagerry and cardamom seeds in a mixer.Mix well and make small sized balls.
